Just tried my hand at Jambalaya. Did it spur the moment after an awful Saturday. Didn't have a recipe before we went shopping, but everything seemed to work out alright. For documentation....

1 package turkey sausage
1 can costco chicken
2lbs frozen, cooked, peeled shirmp, tail-off
1 package of frozen sea scallops (10 oz or so)
1 can garbonzo beans
1 huge can of hominy
1 yellow onion
2 green bell peppers
[random spices, including red pepper, lemon pepper, mrs dash, and other stuff]

Cut sausage and set in pan to brown.
Cut onion, added to pan.
Cut green peppers, added to pan.
Added beans and hominy.
Added chicken.
Added shrimp.
Cooked for a while.
Forgot I had scallops until LEC reminded me.
Added scallops.
Added some water.
Added some chicken bullion.
Added more water.
Added some cous cous.

Served. It was alright, but had waaay too many flavors and it became obvious that rice was a "must" to get it to work.

So... added more water. Added rice. Let simmer for 25 minutes. Turned it all off. Turns out I added WAY more rice than I thought and I had a GIANT pot full of food. Probably 10 servings or so. The rice didn't quite cook enough, so next time I suspect I'll either add more water or cook it longer. I'm hoping for reheats it'll be alright.

Note for next time: either cook it with the rice in the first place, or just cook some rice on the side to serve it over.

Ozzy, this looks like something you might try. Think it can be done on a grill rather than fried?

Nap: it looks like there was a gluten-free modification of this, but I'd assume you and the lady prefer actual cow. :)
