"Massive Cooking" by Ken Kinnan has some great foundations for keeping protein clean but tasty. I especially like the idea of freezing meats with the marinade if necessary.

I tried Emeril's steak marinade. It's AWFUL. Definitely NOT recommended. It tastes like I poured ketchup all over the steak. AWFUL.

Didn't tenderize. I don't even think it soaked in. Yuck.
